The Mercantile is due to reopen in March 2026 after a significant renovation including the creation of a new rooftop bar with amazing views of the iconic Sydney Harbour Bridge.

In keeping with authentic Irish hospitality, we are looking for friendly, enthusiastic and talented people to join our team and contribute to the future success of our heritage pub in The Rocks.

Full time and casual positions are available from late February 2026 in the following roles:

  • Management
  • Kitchen
  • Bar Staff
  • Wait Staff
  • Functions Coordinator / Host
